The pig is on! 18 hours or so, and we will be done.

Just got the piggy on a little after midnight. Ready for a nice slow cook. We used the whole hog injection recipe from Myron Mixon’s new cook book. I hope this piggy turns out as good as the last one. I can’t imagine that it wont. This one is supposed to weigh 118. Last years pig was 128. This years pig looks and feels bigger. Doesn’t really matter. He will get cooked and hopefully everyone will enjoy it.
