Making phô at home

After trying phô at Saigon Restaurant, a strong desire to make it at home developed. First things first….I didn’t even have a recipe.  A quick web-trip through produced what I needed.  Into the Vietnamese Kitchen by Andrea Nguyen.  After flipping through the pages, the only question was chicken or beef.  A few moments later, the decision was made.  Chicken.  Surprisingly enough, most of the ingredients could be found at the local Kroger.  This recipe takes time so don’t think you can quickly toss it together.  Set aside at least 3 hours to do it right.

Onions, cilantro and various other ingredients simmering along nicely.

The finished product.  Not bad for a first try, but far from perfect.  Next time, beef phô.
